PORK · PAN AND OVEN · OCT 2026
Cherry apple pork and slaw burger.
This one is exactly what it sounds like. It was a rainy day, so I cooked it inside: cherry apple rubbed pork seared in a pan, a quick apple slaw, and a pretzel bun with The Trailblazer on top.

Method
This is a guide, not a rulebook. Adjust it to what you've got and what you like.
- 01
Rub the pork.
Coat the pork all over in the cherry apple rub and let it sit while you get the pan going.
- 02
Render the fat.
Put the pork in a pan fat side down over low heat and let the fat slowly render out. Take your time here; that fat is where the flavour is.
- 03
Sear it.
Turn the heat up to medium-high and sear both sides until golden.
- 04
Finish in the oven.
Move the pork to the oven and cook until it hits temp. My meat temperature guide has the temp to check for.
- 05
Make the slaw.
Toss the cabbage, apple and carrot with the apple cider vinegar, some Kewpie and a sprinkle of The Adventurer finish salt. Taste it and add more of whatever it needs.
- 06
Dress the buns.
Split the pretzel buns and spread them with more Kewpie.
- 07
Build it.
Slice the pork, stack plenty on, then the slaw, then The Trailblazer over the top.
